How to Make Cuisines Grilled Pork Karo from North Sumatra - Indonesia

GRILLED PORK KARO ( BABI PANGGANG KARO/BPK )





Pig Roast Karo or more popularly known as the CPC is a food made of pork grilled or baked. This food is the typical cuisine Karo tribe, so many are found in various cities that many inhabited by the Karo, like in Berastagi Kabanjahe, Medan, and even in Pekanbaru, Jakarta, and Bandung.

The difference between Karo Roast Pork with roasted pork the other is contained in the roasting is done way more unique with finer slices and the selection of the right portion of the meat. When served Karo Pig Roast will also be added with a dish of cassava leaves and kincong that has been mashed and cooked typical.

How to Make a Pig Roast Karo


Ingredients : 

  • 1 kg of pork
  • 3 limes
  • 1 stalk lemongrass
  • 2 cloves garlic, finely ground
  • Soy sauce to taste
  • Patilaka sour taste
  • Flavoring to taste



Blood seasoning ingredient (Gota) : 

  • Pig blood
  • 5 spring onions
  • 5 cloves garlic
  • 10 pieces of garlic
  • 5 pieces of cayenne pepper
  • Andaliman taste
  • Lime leaves
  • Salt to taste


How to Make a Pig Roast Karo : 

  1. Clean the pork and cut into the meat cut cubes or squares with a small size to taste
  2. Cut the pork into small pieces (smoked) and sirami with lemon juice until evenly
  3. Puree the leaves of lemongrass and garlic then mix the soy sauce, stir together with the meat and let 5 minutes
  4. Roast pork with charcoal until cooked, remove and set aside
  5. Prepare seasoning blood



How to make blood Seasonings (Gota) : 

  1. Puree onion, garlic, chilli, andaliman, kaffir lime leaves and salt to taste and set aside
  2. Milled patilaka acid and mix warm water and squeezed
  3. Mix the juice results patilaka acid and spices with pig's blood, add a little flavor
  4. Cook processed spices on the stove until done
  5. Remove and serve with roast pork, it would be more delicious when eaten together Vegetable Mashed Cassava leaves and green chili sauce that has been refined
